Chunky Guacamole! To me, “chunky guacamole” does not sound very appetizing,  but luckily everyone knows by now that it’s amazing. I had to share this simple recipe because it’s healthy, fast, easy, and taste oh-so yummy.

Making it easy to step away from the package and make it fresh!  We all know guacamole pairs well with chips, but it  also goes great in wraps, sandwiches,  and salads. Watch the video above for the recipe and some dancing tunes, because dancing in the kitchen  is a must.  Enjoy!

(low glycemic, vegan, paleo)


  • 3 soft avocados
  • ½ cup of onion  (about ½ medium sized onion)
  • 2 tablespoons of cilantro
  • Juice from 1 lime
  • ½ teaspoon of sea-salt or himalayan salt
  • ½ teaspoon of pepper
  • 2 medium sized tomatoes


  1. Cut the avocados in half, deseed and score, then add the avocados to a large mixing bowl and discard the skin
  2. Dice the onion and combine with the avocado
  3. Mince the cilantro or use pre-ground cilantro and add 2 tablespoons to the mixing bowl
  4. Dice 2 tomatoes and deseed, then add to the mixing bowl
  5. Add the salt, pepper, and squeeze 1 fresh lime to the mixing bowl
  6. Mix all ingredients by mashing with a large fork to create a chunky texture 
  7. Best served immediately
