This photo was inspired by my new found treat! Watermelon seeds, the new pumpkin seed.
Those pesky seeds that typically get in the way, have blossomed out of their shell. These sprouted watermelon seeds are full of minerals including, phosphorus, Zinc and Manganese, and a very good source of Magnesium. They are a surprising protein powerhouse containing 8 grams of protein per ounce. This is a great way to add protein and satisfying crunch to your smoothie bowl.
This green smoothie is full of healthy fats, vitamins, and minerals. I find smoothies a great way to incorporate a daily dose of RAW veggies!
- 1/2 cup of spinach
- 1/2 cup of kale
- 1/2 frozen banana
- 1/4th cup of blueberries
- ¼th avocado
- ½ cup coconut milk
- 1/4th Crushed almonds
- Watermelon seeds
- Cinnamon sprinkled
- Blend the Spinach, Kale, Banana Blueberries, Avocado, and coconut milk until pureed
- Place in a bowl and top with Watermelon seeds, Almonds, and Cinnamon
Smoothie bowls don’t just serve the purpose of a beautiful picture. They are actually beneficial because the result in you “chewing” your smoothie. We often drink smoothies like water, and forget about how much food we are technically eating. Even the the food is already in pureed form, the nutrients still need to be broken down and absorbed. When we chew our food it releases digestive enzymes that are used to break down the nutrients in our food. So eating smoothies with a spoon and solid food is beneficial.
